"You have to have a very refined taste to fully appreciate this tea" commented one lady after taste testing Lady Grace. I couldn't work out if she was delighted or less than pleased with our signature oolong. Not to worry, another lady from the same group took a sip and almost fell head over heels demanding "wholesale quantities please!" Refined taste? The well-travelled university lecturer seemed to fit the bill quite nicely.
There is an art to brewing and enjoying this tea. You see, the leaves are rolled so tightly that you only need a small teaspoon to brew one serving. Too much and the leaves will be choked in the tea infuser. In the first couple of minutes, the brew is incredibly light and delicate. Give it some time and this tea will develop into a complex array of flavours you never have expected. From the first aroma, there's a delightful breath of fresh nori sheets followed by peppery notes and developed vegetal tones.
What else do I love about this oolong? Keep brewing and brewing and brewing it over and over again... the leaves never seem to run out of flavour.
